Our sheep are Katahdins, a hair breed as opposed to a wool breed. Hair sheep are known for their milder flavors and even the older sheep in our flock do not develop into strong mutton. We raise 100% grass-fed lamb for optimum healthfulness of the meat. Grass-fed lamb is known for it's more complex bouquet and this definitely holds true for our flock.
Each 1/2 lamb bundle contains the following cuts (all weight are approximate)-
Butterflied leg of lamb (4.33 pounds)
Rack of lamb (2.33 pounds)
Loin chops (1.7 pounds)
Ground lamb (Five 1 pound packages)
Riblets for stewing (2.1 pounds)
Neck slice for stewing (.7 pounds)
Lamb shanks (1.4 pounds)
All cuts are vacuum packed and frozen.
Unlike last year, we are only listing half lambs of a uniform size, so if you order one it will be about 17 pounds.
